Over the Bank Holiday Weekend, we were sent some vouchers to experience Morrisons new permanently lower prices. So to celebrate the new cheaper prices, we headed off to our nearest store to get the shopping done!

We were also impressed by some of the more unusual fruits and veg available on 'Market Street' including 'white peppers' and 'black peppers' and yellow courgettes.
D also managed to pick up Saturday evening's entertainment at a pocket money price!

We really needed the Bank Holiday weekend to be one of relaxation and rest. We've all been maga-busy lately and so we needed some simple meal ideas to get us through the Bank Holiday weekend. We've got a recipe for you at the end of this post, but have included a 'twist' to the other meals for you to try out.
So here's our weekend in meals - along with price per portion (worked out to the best of our ability). We also managed to pick up some reduced items which we couldn't resist - but have worked out these prices based on the normal full price so that you can see that they still work out as great value for great quality food.
Saturday Evening Sausages and Mash
Cost per person: £1.92p
Our twist for this is to make a simple redcurrant gravy using instant gravy granules with hot water with a couple of spoonfuls of redcurrant jelly stirred in. We picked up a couple of packs of Morrisons 'Signature' Creamy Maris Piper mash to make it a mega-quick meal! If you make your own mash from scratch, you could get the cost down even lower.

Cost per person: 60p
We worked out that this works out at less that 60p per person even including the strawberry garnish we added!Special Sunday Morning Fry-Up
Cost per person: £1.43
We decided to start the day enjoying a fry-up for breakfast. And our twist is to have a pancake, ice-cream and maple syrup with your fry-up. It actually tastes great alongside the bacon and sausages. We had this in the states many years back and love re-creating it at home!
Another twist for added luxury is to add a dash of double-cream to the eggs for a really tasty scrambled egg.
Sunday Steak Sandwich with Paprika Potato wedges and colourful carrot salsa
Cost per person: £1.50
We found these lovely Olive Bread rolls reduced from the Bakery section (We've worked it out as if it was full price in price per person) and thought they'd make a great Steak Sandwich.
Our twist is that we made some paprika potato wedges (just wash and chop the potatoes, toss in oil and sprinkle with Smoked Paprika and pop in the oven for 25-30 minutes at 200C).
The carrot salsa is just grated carrot, a chopped baby tomato, chopped spring onion, and a dash of white wine vinegar. The steak sandwich is garnished with some lettuce and some fresh coriander and parsley.
Ice-cream and sprinkles
Cost per person: around 30p
Followed by ice-cream with lots of lovely sprinkles we picked up at Morrisons.Monday's Marvellous Roast Lamb
Cost per person: £2.03
We don't have roast very often, and were so very excited about it that we totally forgot to cook the radishes!!! They cost only 50p for the whole pack so that would have been another great value addition to our roast dinner had we remembered to cook them.
Home-made Trifle
Cost per person: 28p
The kids adore trifle but we rarely ever make it from scratch - so this was a great chance to do so. We used a tin of peaches from Morrisons, some trifle sponges, a pack of jelly, some ready-made custard and finished off with double-cream whipped and piped on top, then topped with those lovely sprinkles again!
Having such great quality food together with these simple meal ideas meant that we had lots of time free to potter in the garden, go for walks and bike rides and generally enjoy the sunshine. We did promise you a recipe though so read on to find out what we made with the left-over lamb and that yellow courgette we bought!
Vegetable Cous-Cous and leftover lamb
Cost per person: £1.70
250g cous-cous (cooked as per pack instructions)
1 courgette (can be green or yellow) - thinly sliced
1 red onion - finely chopped
1 clove garlic - finely chopped
1-2 spring onions - chopped
Red pepper - chopped
Yellow pepper - chopped
pinch of dried oregano
Sundried tomatoes in oil - roughly chopped
Leftover lamb from yesterdays roast - shredded to pieces
Leftover carrots from yesterdays roast - chopped
Leftover green beans from yesterdays roast - chopped
A little rapeseed oil
Method:
1. Cook the cous-cous as per pack instructions.
2. Heat the oil in a pan and gently fry the garlic, onion, and then the peppers, courgette and spring onion. Add in the tomatoes and oregano. Cook until softened.
3. Stir in the cous-cous until well combined. Then add in the already-cooked lamb, and finally the already cooked carrots and green beans to heat through.
This is a really quick and simple meal to put together whenever you have some leftover roast meat. Looks great for the summer too with all that colourful veg in it. If you use a green courgette instead of yellow then the cost comes down to just £1.52 per person.
