Minute make cake


Those of us with toddlers and preschool children are all too familiar with Mister Maker's minute make time where he takes a craft idea and impressively makes it in a minute.

When Miss T asked for chocolate cake after lunch the other day, my first thought was 'no way - that's going to take ages'. But then I remembered that I had come across the idea of microwave mug cakes before and I'm already a big fan of using the microwave for making birthday cakes, so I wondered if I'd be able to make a mini chocolate cake in one minute in the microwave. 

I got the ingredients mixed together pretty quickly too by using one bowl placed on my scales and then just added the ingredients straight in. 

Ingredients: (makes 3 small ramekin sized cakes)
60g self raising flour
10g cocoa powder
40g honey
30ml rapeseed oil
30ml milk
1 egg

Method:
1. Mix all the ingredients together well.
2. Pour into ramekins
3. Microwave each one on full power for 1 minute.
4. Allow to cool a little and serve with strawberries and chocolate frosting.

For the frosting I mixed together some butter, icing sugar and coca powder. Then melted a little chocolate (half power in microwave for 30 seconds at a time until melted) and mixed that with a little single cream. Then combined this creamy chocolatey mixture with the butter frosting mixture. It makes the frosting taste less buttery and more chcolatey. I just made up the frosting as I went along - but thankfully it turned out great!

Now I know that chocolate cake is far from healthy but to ease my conscience I like to think that using honey in place of sugar and rapeseed oil instead of butter in the cake mixture makes it a little healthier at least.
